Why Choose SushiTaké

1. No Sugar in Sushi Rice

There is no sugar added in our sushi rice.
The rich flavor comes from the golden ratio of natural sea salt and red vinegar, that is carefully made over a long period of time. While many sushi restaurants put a lot of sugar into rice, the owner of SushiTaké, Takeshi, believes it is an unnecessary ingredient so that the customers can enjoy the original flavor of truly fresh ingredients and the sweetness of rice itself.

2. Premium Japanese Rice

At SushiTake, we only use the rice from Nagano prefecture that is known for its very limited use of agricultural chemicals and its premium quality rice often referred to as pearls.
This quality is enabled by the effort of farmers to irrigate only pure natural water to the rice fields, avoiding the use of any domestic wastewater.

3. Fresh Wild-Caught Fish Only

With over 30 years of experience, the owner, Takeshi, selects the best seasonal fish and the ingredients himself from Toyosu fish market every morning. He only chooses wild-caught fish that is fresh and full of “Umami” so no farm raised fish is used in the kitchen. It takes a lot of experience and time to acquire the skill (called “Mekiki” in Japanese) to identify the best fish just by taking a look at them.

4. Everything Made from Scratch

In general, most of sushi restaurants serve not only sushi and sashimi but also other types of food. Especially, “Oboro (Shrimp paste)”, “Kanpyo (Dried gourd strips)” and “Tamago (Sushi-omlet)” are often served at typical sushi restaurants. While a lot of sushi restaurants purchase prepared products, at SushiTaké, everything is made from scratch at the restaurant and contains no additives or preservatives.

In Japan, the definition of beauty exists in simplicity. Applying this definition of simplicity and pure beauty into the concept at SushiTake; having less decorations, appropriate ingredients, refining unnecessities and provide the best of original ingredients.
