亀井鮨 – Kamei Sushi –

It all began on March 20, 1887, in the 20th year of the Meiji era.
I, Takeshi Mori, the current owner of Sushi Také, am the great-grandson of Isematsu,
who was the founder of our sushi legacy, “Kamei Sushi,” located in Yotsuya, Tokyo.

Approximately 35 years ago, I embarked on my authentic sushi apprenticeship.
Ever since, I have relentlessly pursued the creation of
“truly delicious sushi.”

– From Kamei Sushi to Sushi Také –

In 2011, we had to close down Kamei Sushi due to some twists and turns.
After that, I found joy in helping other restaurants improve and expand.

I thought my days behind the sushi counter were over, but thanks to many people saying,
“Give it another shot!”
I realized how much I missed being in front of customers.

It didn’t take long for me to decide to reopen my own restaurant again.

With the aspiration to create an ambiance of comfort and deliver genuinely exquisite sushi to all,
preparations for the grand opening of Sushi Také began.

“Don’t tarnish the shop’s reputation – you have to work honestly.”

“Efforts to offer reasonable prices are crucial.
However, just because you want to lower prices doesn’t mean you should compromise on taste.”

“Customers may seem not to notice, but they observe whether it’s authentic or not.
Don’t be swayed by gimmicks or trends.”

These are some of the words my father, Yukimasa, left me with.
And those principles are still very much alive in Sushi Také today.

Whether it’s the rice, ingredients, wasabi, or seaweed –
– each part is made with care to ensure you have a good time without any unnecessary embelishment.
